As a general rule the coconut children tend to like it a lot and, although dehydrated, it is quite juicy, so we should not fear that we will have some dry and hard cookies.
The process of making delicious coconut cookies is very easy. We will only have to mix the eggs, sugar, flour, coco and a pinch of salt. Then we will take it to the oven and that's it. Ingredients
- 125 gr. grated dehydrated coconut
- 100 gr. sugar
- 40 gr. Of flour
- 2 eggs
- a pinch of salt
Preparation
First we will beat the eggs vigorously together with the sugar until we obtain a whitish mass.
Next we will add the sifted flour.
Now we will add the dehydrated coconut and the salt and we will mix the whole set well until we get a homogeneous paste.
At this point, we will preheat the oven to 180º C. While it is heating, we will place a baking paper on a baking tray and we will make small mounds with the dough using a couple of spoons. Remember that you do not have to put them too close together, since during cooking they expand, acquiring the final shape of a biscuit, and they could stick together.
We will bake for approximately 15 minutes, after which our cookies will be ready.
I must say that they are so good that they are finished soon, but they keep well for days in one of those metal boxes where the Danish cookies that we buy at the supermarket come from.
