Again a lemon-based cake. The refreshing flavor of this citrus fruit we love for the summer. The base of the cake is made with cookies, but we can change it for a classic shortcrust dough. Do you prefer the orange cake? Well, change the lemon juice for that of this other fruit.

Ingredients

For the base:

  • 2 cups of chopped cookies
  • 3 tablespoons of powder sugar
  • about 6 tablespoons of butter,

For the cream:

  • Lemon zest
  • 175 ml. freshly squeezed lemon juice (already strained)
  • 100 gr. sugar
  • 3 tablespoons of liquid cream
  • 4 XL eggs

Preparation

  1. To prepare the base of the cake, we begin by mixing the butter very well with the sugar with the help of some rods, preferably electric

  2. When we have a whipped cream, we mix it with the well-ground cookies

  3. We form a sandy paste, cover the bottom of a removable round mold lined with baking paper and refrigerate.

  4. Meanwhile, we prepare the filling cream

  5. Mix the lemon juice and sugar

  6. Beat the eggs together with the sugar and cream and mix with the juice.

  7. Fill the biscuit dough with this cream and take it to the preheated oven at about 190 degrees for about 35 minutes so that the cake sets.

  8. Let it cool to room temperature and then leave it in the fridge for a couple of hours.

    The recipe is not well explained, there are two types of sugar and it is not known when one or the other is used, I would appreciate the clarification. All the best

      Hello Pilar,
      The recipe is already modified. The icing sugar is for the base of the cake. The 100 g are for the cream.
