- 50 g of ground almonds
- 350 g of wheat flour
- 1 teaspoon of baking powder
- 1 egg
- 150 g of chocolate for pastry
- Two tablespoons of sunflower oil
- A handful of grated coconut
Preparation
- In a large bowl we add the 120 g of butter and 100 g of sugar. We mix it with a hand mixer.
- Add the 50 g of ground almonds, the 100 ml of sunflower oil, the tablespoon of vanilla extract and the egg. We go back to mix with the mixer.
- Finally we add the 350 g of wheat flour and the teaspoon of baking powder. It we mix with the mixer.
- We knead a little with our hands and we form a ball. We wrap it with a plastic film and put it in the refrigerator for 30 minutes.
- The dough is ready, we take portions and make the shape of the hedgehogs. Flatten the elongated, rounded shape a bit and form a peck that will simulate the nose.
- We put it in the oven at 180 ° between 15 and 20 minutes. Once baked we let them cool.
- In a bowl we put the chopped chocolate and two tablespoons of sunflower oil. We will put it in the microwave to undo it. We will program 30 seconds at low power and in batches. In each batch we remove the chocolate, stir and reheat others 30 seconds. So on until all the chocolate is dissolved.
- We immerse the tip of the nose of the hedgehogs and we also submerged half of the body rear. We place them on a rack to dry and add the grated coconut. With the tip of a wooden toothpick we can take a little chocolate and put droplets on the cookie that will be the eyes. To speed up the drying of the chocolate, we can put it in the refrigerator. I hope you like these fun cookies.
