It can be done with curd or with ricotta, it goes well with both. It is done in a moment and is so simple that the little ones will be happy to give us a hand. The result is a large sponge cake, with a soft and very soft flavor ... a perfect snack to have with the family or a delicious snack that we can even take to the pool.
We decorate it with icing sugar, sprinkling it with a strainer. But you can make it more complete and "fun" by putting melted chocolate.

Ingredients
- 4 eggs
- 180 g of sugar
- 300 g flour
- 250 g of ricotta or cottage cheese
- 30 g of extra virgin olive oil
- 1 envelope of yeast for sweets
To grease the mold
- Butter
- Flour (XNUMXg)
To decorate
- Powdered sugar
Preparation
We put the eggs in a large bowl. The we beat with the rods.
We add the sugar and we mix all good.
Add the oil and ricotta and continue mixing.
We now add the flour and the yeast and we integrate all with a wooden spoon.
We put our mix in a mold round (about 28 cm in diameter) or rectangular (30 × 40).
We bake 180 º (preheated oven) for 25-30 minutes approximately or until we see that it is golden.
Once cold, we unmold and cut our sponge cake into small squares. Sprinkle the surface with icing sugar.
