Ingredients
  • 300 g of zucchini
  • 80g soft onion
  • 60 g of wheat flour
  • 120 g olive oil
  • 400 ml of hot whole milk
  • 200 ml hot vegetable broth

  • Mild olive oil to fry the croquettes

Preparation
  1. We wash and split the zucchini in very small pieces. We can leave the skin, it is optional.
  2. We peel and chop the onion in very small pieces.
  3. Heat them in a wide frying pan 60 g of olive oil. When it gets hot, add the zucchini and onion.Zucchini croquettes
  4. We leave sauté over medium heat and stirring from time to time. We must wait for the vegetables to soften. When it's done, set aside.
  5. In the same pan we put 60 g of olive oil and when it gets hot, add the milk little by little. It is recommended that the milk be hot. We're stirring and we let it go slowly thickening.
  6. Finally we throw the Vegetable broth. We will do the same process, adding little by little and stirring until see that it takes its thickness. Add the salt, black pepper and a pinch of nutmeg.Zucchini croquettes
  7. when we have our Bechamel sauce we incorporate the diced zucchini and onion and let it all cook together for 1 minute.
  8. Pour the dough into a bowl and we cover it with a plastic film. You have to wait for the dough to cool and set to form the croquettes. The usual thing is to make the recipe the night before to have the dough ready the next day.
  9. With the ready dough we will form the croquettes with the hand and we will spread them with wheat flour and make it easy for us to make your shape.
  10. We will spread them egg and finally breadcrumbs. We are placing them on a plate.
  11. We heat the light olive oil for frying. When it gets hot, we add the croquettes and turn them from time to time so that they cool and take a golden color.
  12. As we remove them from the pan, we can leave them on a plate with kitchen paper, so that they drain. They are served hot.
