Couscous with stewed turkey, you choose the vegetables

Preparation

1. First we prepare the vegetables. Cut the onion into fine julienne strips, peel the tomato, remove the seeds and cut it into cubes. The green pepper we make thin rings, the carrots sliced ​​and the garlic we add them chopped.

2. In a saucepan with the bottom covered in oil, first sauté the onion with a little salt. When a few minutes pass, add the pepper and carrot.

3. Once the vegetables in the saucepan are tender, add the garlic and tomato. Season with salt and pepper and add the bay leaf.

4. Meanwhile we will have browned the turkey with salt and pepper in a pan with oil.

5. Then we add it to the sautéed vegetables, add the wine and wait for it to reduce.

6. Next we are adding hot broth so that the turkey cooks over a low heat and becomes tender.

7. It is preferable to swell the couscous apart from the stew, to prevent it from caking. To give it more flavor, we measure the same amount of couscous as chicken broth in a container.

8. Bring the broth to a boil, add the couscous, stir and let stand covered for about 5 minutes.

9. Once the couscous has been tendered, we loosen it with a fork and serve it with the stew.
