Today's is a traditional dish and, above all, of use. The main ingredient is stale bread, the one that we sometimes throw away because we don't know how to use it. The good thing would be to get into a routine: to keep the remaining bread in a bag during the week and, on Sundays, to make these delicious crumbs with chorizo. We tried?

Perhaps the most expensive (in the boring sense) is to cut the bread because the preparation itself is not complicated. I summarize it: we sauté the garlic and sausage (in this case also the sausage) and in that same oil we cook the sliced bread. Yes, we will have to do it over low heat and stirring with a wooden spoon ... it is the beauty of the traditional dishes.

Ingredients

500 g of the bread that we have left over during the week
50-70 g of water to moisten the bread
100 g of extra virgin olive oil
6 unpeeled garlic cloves (with a small cut) and 2 peeled garlic cloves
2 or 3 chorizo diced
1 or two sausages, shredded
1 teaspoon of paprika from La Vera

Preparation

With a board and a serrated knife, cut the bread into cubes. We are putting it in a bowl with the water and the paprika. We mix everything well, cover with a cloth and reserve.
In a frying pan we put the oil. We put it on the fire and, when it is hot, we add the garlic, some of them peeled and others unpeeled. We also add the diced chorizo and the crumbled sausage.
When everything is sautéed, we remove it from the pan to a plate, leaving the oil in the pan. We reserved the chorizo and sausage for later.
In the frying pan with the oil we now put the bread that we had chopped and a little more paprika if we consider it necessary. We cook it over low heat, stirring constantly.
Add the oregano and continue cooking. The crumbs will gradually decrease in size.
When they are practically done, it will be time to add the chorizo and sausage that we had reserved at the beginning.
Let everything cook together for a few more minutes, always stirring.
And there they are, ready to serve
