400ml milk
150gr of sugar
4 sheets of neutral gelatin
the skin of a lemon
A branch of cinnamon
2 tablespoons vanilla sugar

For the candy

200gr of sugar
8 tablespoons of water
The juice of half a lemon and half an orange

Preparation

Cook the milk with the lemon peel, cinnamon, sugar and vanilla sugar for about 5 minutes. Allow to cool slightly and remove the lemon peel and cinnamon stick.
Hydrate the gelatin sheets with a little milk and when they are hydrated, add them to the milk, stirring until they are fully integrated.
Prepare the mixture in each caramelised flanera and let it cool and then put it in the refrigerator for 2-3 hours.
Our flans will go with two types of caramel. On the one hand, the liquid caramel that will go inside the flaneras, and on the other with some citrus caramel combs to decorate them.
Pour the sugar into the water and the juice of half a lemon and half an orange in a saucepan. Stir until you see that the caramel begins to make, and it remains with a golden hue. At that time, remove from the fire.
