4 whole chicken breasts
1 large chive
200 ml soy sauce
100 ml of sake
100 g of white sugar
100 ml mirin
5 gr of fresh ginger skin
4 tablespoons olive oil

Preparation

Prepare our teriyaki sauce by putting the soy sauce, mirin, sugar, sake and ginger peel in a small saucepan. Heat over high heat and stir until the sugar is completely dissolved. We let everything cook for about 3 more minutes without stopping to remove.
Once we have the sauce, we strain it and leave it reserved.
We clean the chicken breasts and cut them into cubes or strips that are not too small. In a pan we put a drizzle of olive oil and heat the oil. Add the pieces of chicken breast and julienned spring onion. Let everything brown for about 5 minutes, and add the teriyaki sauce. We let everything cook for about 15 minutes.
When we see that the chicken is shiny, and the sauce is almost consumed, we remove from the heat, and serve the chicken with white basmati rice.
