It is one of my favorite desserts, and whenever I make it it triumphs among my guests. When it comes to making it, it is very simple, and if we put a little love and decorate it in an original way, the presentation is usually quite a show. So this night of Valentine's Day!, we are going to surprise our partner with this cold heart-shaped cheese cake, perfect to put the finishing touch to a romantic dinner.

What molds should I use?

To have the perfect shape of our cookie cake, you can choose two ways to make it:

  1. If you are going to prepare small cheesecakesI recommend that you use a heart-shaped cookie cutter.
  2. If you are going to do a big cake in the shape of a heart for both of us, use a heart-shaped silicone mold like these from Lékué that are very easy to demold.

Ingredients

Biscuit base

  • 12 toasted Mary-type cookies
  • 100 gr. butter at room temperature

Pie filling

  • 250 gr. of liquid cream
  • 100 gr. sugar
  • 4 gelatin sheets
  • 500 gr of spread cheese (Philadelphia type)
  • Blueberry or raspberry jam
  • Heart shaped cookie cutter

Preparation

  1. We will start by preparing the cookie base for our cheesecake.

  2. To do this, we will start by cutting the cookies into small pieces so that later we can crush them completely with the help of a blender. Once crushed, we add the melted butter and stir until we get a dough that serves as the base for our cold cheesecake. Place the dough in the mold or on the cookie cutter, covering it evenly, and let it cool in the fridge for about 20 minutes.

  3. Once we have the base, we will continue with the cheesecake filling.

  4. The first thing we will have to do is use a bowl with warm water, and put the gelatin wafers, so that they soften. And we let them rest.

  5. Meanwhile, we prepare a pot, where we will heat the cream over low heat without letting it boil, and we will gradually incorporate the sugar, while we stir so that it dissolves. Once we have added all the sugar, we add the cream cheese and the gelatin wafers to the mixture. We remove all the ingredients until a homogeneous mass is created without reaching its boiling point.

  6. Once we have the mixture ready, we will take the mold out of the fridge, and we will put the filling on the biscuit base, and we will let it cool in the fridge to set, about 6 hours. After this time, we will check that the filling is completely compact, and we will add the jam or blueberry or raspberry jam on top.
