Ingredients
- A fresh puff pastry
- 350 gr of boiled spinach
- 350 gr of ricotta cheese
- 1 egg
- 100 gr of grated Parmigiano Reggiano cheese
- Sal Island

Preparation
Take the puff pastry out of the refrigerator and let it stay at room temperature to work it better.
Boil the spinach, and once you have boiled it, drain it to remove any excess water. Let them cool, and cut them into strips. Put them in a bowl, and mix them with the ricotta cheese and the grated cheese. Add the egg, breadcrumbs, salt, and pepper, and continue mixing until the ingredients are well blended.
Preheat the oven to 180 degrees. Divide the dough in two and create two circles with the help of a rolling pin to make the dough more stretched and with the tip of a knife to make the circles similar in size.
Place the first circle on baking paper and put the filling as I marked you in the photos.
Cover the dough with the second circle, moisten the edges with a little water and seal them with the help of a fork.
Place a small bowl on the dough and go making cuts with a knife with a distance of about 2-3 fingers between cuts.
Once you have it, put the spinach cake to bake for about 30 minutes at 180-200 degrees.
