If you want the little ones to eat vegetables, ask them to help you prepare this delicious appetizer: some fun slices of aubergine with Fresh tomato and mozzarella.
We can chop the ingredients and they will only have to assemble each portion. Sure, after helping us, they will eat the eggplant well cooked so happy.

An aubergine appetizer that the little ones will like a lot.

Ingredients
- 1 eggplant
- 2 tomates
- One or two mozzarella balls
- Oregano
- Sal Island
Preparation
We chop the mozzarella and put it to drain in a colander.
We wash the aubergines well and cut them into slices.
We put our aubergines on a sheet of greaseproof paper. We add a little salt to them.
We wash the tomatoes and cut them into slices. We put a tomato slice on each aubergine slice.
We put a few pieces of mozzarella on the tomatoes.
We add salt, aromatic herbs and a little salt.
Also a splash of extra virgin olive oil.
Bake at 180º for 10 or 15 minutes, until we see that it is golden.
We serve immediately.
