If we could do BURGERS with the aubergines why not try some meatballs. Well, we tried and they came out delicious. Simply fried with a little mayonnaise, or with a tomato sauce or a little ratatouille, These meatballs can be a capita or a first to lick your fingers.

Today we are going to prepare some vegetable meatballs, specifically aubergines. They are delicious!

Ingredients

  • 600 gr. eggplant
  • 1 egg
  • 2 cloves of garlic
  • 60 gr. grated old cheese
  • 3 tablespoons of natural breadcrumbs
  • packaged or plain breadcrumbs
  • Basil leaves
  • oil
  • pepper and salt

Preparation

  1. Peel the aubergine and blanch it in salted water for 5 minutes

  2. Then, let it cool down and chop it very well into small pieces with a knife or with a food processor.

  3. Add the egg, minced garlic, three tablespoons of breadcrumbs, sheep cheese, minced basil and a pinch of salt and pepper

  4. Mix the ingredients well and form the meatballs

  5. Pass them through breadcrumbs and fry them in hot oil until golden brown.

    I love eggplant, I like it in everything, I make mousaka on purpose one day a week, I bake it with peppers and then I make esgarraet for the weekend… ..and now I have seen this recipe and I have loved it. Thank you very much it is a super good idea.
