Eggplant rolls with minced meat

Preparation

1. Clean the aubergines, and cut them into 1 cm thick transverse slices so that later they are the perfect roll and do not break when folding them. Leave them reserved, while we prepare the minced meat filling.

2. In a frying pan we put a little olive oil, and as soon as it is hot we add the very chopped onion. We wait for it to cook and add the carrot, also quite chopped. Cook these two ingredients until golden brown.

3. Season the minced meat and add it to the sauce.

4. We let it sauté with the carrot and onion, and when we see that it is almost done, we add the two diced peeled tomatoes.

5. We let everything cook over medium heat, so that the tomato sweats and gives off all its flavor and color on the meat.

6. We taste salt and if we see necessary we add a little more. When it is almost ready, we add a glass of white wine and let everything reduce for another 10 minutes, while we prepare the aubergine slices.

7. Put a drop of oil on a griddle or non-stick frying pan, wait for it to heat up, and place the slices of aubergines to grill. When we have them ready, we let them eliminate the remains of oil on an absorbent kitchen paper.

8. Now we begin to prepare our eggplant rolls with minced meat. To do this, we take a slice of aubergine, and we put a little minced meat filling in the center. So that nothing escapes, we fix it with a toothpick.

9. We serve the aubergines accompanied by a salad to our liking.
