Escarole and Chicken Caesar Salad

Caesar salad as we know it today, based on chicken, it is not the same as the original recipe created by the Mexican chef of Italian origin named César Cardini. The authentic Caesar salad, now famous throughout the world in part thanks to fast food restaurants, is made with romaine lettuce and fried bread dressed with olive oil, hard-boiled egg, lemon juice, worcestershire sauce and black pepper.

But to make it closer to the taste of children, we are going to substitute the lemon, pepper and Worcestershire dressing, more sour and powerful, for a creamy yogurt sauce or a conventional vinaigrette with honey. On the other hand we will provide an ingredient rich in protein to make it more nutritious, such as chicken and cheese.

In short, from the original Caesar, only lettuce and fried bread have remained in most versions of this salad that are made today, to which anchovies or ham is also usually added instead of chicken.
