Today I woke up very Sevillian and with a smile on my face, because the good weather seems to be coming to finally stay. So I am going to pay a small tribute to all those Andalusians and non-Andalusians who walk around Seville enjoying the good weather and the good Sevillian tapas. So this dish is for them! So that on days like today, they smile a little more :) Marching one of…. flamenco style eggs!
Flamenco style eggs

Ingredients
- One onion
- Two cloves of garlic
- A pinch of sweet paprika and another of spicy
- Olive oil
- 200 grams of chopped chorizo
- 150 grams of Serrano ham
- 125 grams of cooked peas
- 4 eggs
- 400 grams of potatoes
- Sal Island
- 50 gr of tomato sauce
Preparation
In a frying pan we put a jet of olive oil to heat. Cut the finely chopped onion and garlic and let everything sauté until it takes on color. (About 8 minutes). We put a little salt in it.
Add the chorizo, chopped into medium pieces, and the ham, also chopped. We let them sauté with the onion and garlic and add a pinch of the two peppers.
We continue sautéing and add the cooked peas and the potatoes that we have previously fried in squares. We let everything sauté again and put a little tomato sauce on it and let everything cook over medium heat for a few more minutes.
Now we pass everything that we have prepared in the pan, to a clay pot and make four holes to incorporate the eggs. We break them on the clay tray, and bake at 200 degrees for about 5 minutes until we see that the white of the eggs has set, but that the yolk remains raw so that we can dip bread.
Now it only remains to serve them and…. Delicious !!
