Tortillas from San José, fluffy and sauced

I've always liked some breadcrumbs and egg left over from a home breading recipe so they could make some San José omelets. These tortillas are not a dish in themselves, but they are usually accompanied with a sauce or stew and they are delicious. Its flavor brightens up with a mince of saffron, garlic and parsley.
