Ingredients
- 4 dried tomatoes
- 175 gr of water
- 50 ml of aceite oliva
- 375 gr. flour
- 1 teaspoon of sugar
- A little bit of salt
- Dried rosemary
- 1 tablespoon baker's yeast
- black olives
- 100 gr of feta cheese
Preparation
Soak the dried tomatoes for 10 minutes in hot water, to rehydrate them. Once hydrated, drain them and dry them with paper. Cut them into small pieces.
Cut the feta cheese into small pieces.
Prepare the focaccia bread dough by mixing the flour with the salt, yeast and sugar in a bowl. Make a hole in the center and gradually add warm water to about 37 degrees. Also add the oil, rosemary and chopped dried tomatoes (Leaving a few reserved for decoration). Mix with your hands and make a dough.
Flour a table and knead for about 10 minutes until the dough is elastic. Cover with transparent film and let it ferment for about 45 minutes until we see that it has doubled in volume.
After that time, stretch the dough to make a large oval piece, and place it on a tray previously covered with baking paper. Cover with a clean cloth, and let it rise for another 40 minutes until the dough rises and is fluffy.
Then make small indentations with your finger in the dough and add a trickle of oil. Sprinkle with the rest of the ingredients (the dried tomato, the feta cheese in pieces, the black olives, and the coarse salt).
Bake at 190 degrees for about 30 minutes until you see that the dough is well cooked and golden.
