I love pasta in all its forms, but fresh pasta is crazy for me and if it is stuffed on top, then better than better. It takes 3 minutes and practically any sauce works well, making it very useful for a quick lunch or dinner.
This time I had a package of fresh pasta stuffed with pesto and ricotta in the fridge, so I didn't think twice and prepared a delicious one fresh pasta with mushroom sauce and ham. I have used Serrano ham for the recipe, but if you are more of York ham, turkey or bacon, you can substitute it.
Fresh pasta with mushroom sauce and ham

Ingredients
- 1 package of fresh pasta
- 1 / 2 cebolla
- 1 garlic clove
- 50 gr. from serrano ham to taquitos
- 150 gr. of mushrooms
- 200 gr. evaporated milk
- 30 gr. grated cheese
- 1 spoonful of fried tomato
- chopped parsley
- olive oil
Preparation
Finely chop the onion and garlic.
Poach in a frying pan with a little olive oil.
Add the ham cubes and sauté them briefly together with the onion.
Add the clean and rolled mushrooms. Cook over medium heat for 3-4 minutes until soft.
Add the evaporated milk and the fried tomato. Stir and cook for a couple more minutes.
Finally add the grated cheese and the chopped parsley. Stir until the cheese is fully integrated into the sauce.
Once the sauce is done, cook the fresh pasta in plenty of salty water for the time indicated by the manufacturer on the package (usually between 1 and 4 minutes depending on the type of pasta).
Drain, serve on the plate and cover with the sauce that we have prepared.
