The best way to make the most of yesterday's bread is to prepare some crumbs like the ones we show you today. We will serve them with the best of accompaniments: with fried eggs.
They carry chorizo, bacon and little else. Of course, we will do them slowly, constantly stirring, until they are the way we like them.
Do not hesitate to serve them with grapes or even with melon, which is what we have now in the greengrocers. You will love the contrast of flavors.
Fried egg crumbs

Ingredients
- 800 g of bread from the day before
- A tablespoon of oregano
- A tablespoon of sweet paprika
- A splash of milk
- Olive oil
- 3 or 4 cloves of garlic
- Chorizo
- Pancetta
- Extra virgin olive oil, stop the crumbs and to fry the eggs
- 6 eggs
Preparation
We cut the bread, with the knife, into small pieces.
We put it in a large bowl and add the sweet paprika and oregano. We stir and let it rest, covering the bowl with a kitchen cloth.
We add a splash of milk and let it rest again, at least an hour.
We prepare the rest of the ingredients.
We chop both the chorizo and the bacon.
We put the oil in a pan and also the garlic cloves.
When the garlic begins to brown, we remove them (we will not need them because we have only used them to make the oil have more flavor)
Now add the chorizo and the bacon that we have chopped up into the hot oil.
After a few minutes we put the bread in a large saucepan or frying pan. Then we pour over it what we had in the pan: the oil with the chorizo and the bacon.
Cook the crumbs, over low heat and stirring constantly, until they are to our liking.
Once we have them done, fry the fried eggs, one by one, in a pan with plenty of olive oil.
We serve by putting a fried egg on each plate along with a portion of crumbs.
