We can use any cake we have at home to make these fruit cupcakes. The important thing is that we bathe it well with our syrup and then accompany it with a rich cream, in my case, with a lemon cream.
On top of the cream we are going to put fresh fruit. kiwi, mango or even strawberries. All of them are perfect for this sweet, both for its flavor and its color.
We will finish the preparation with a little melted chocolate.

Fruit cakes with lemon cream

Ingredients
- 1 sheet of Genoese sponge cake (or of any cake)
- 170 g of water
- 80 g of sugar
- Lemon cream
- 1 kiwi
- a few pieces of mango
- 100 g of chocolate fondant for desserts
Preparation
IF we use any cake, like the one you have in the link, you only have to cut a plate horizontally. We put it on baking paper.
Put the water and sugar in a glass. Heat it in the microwave (one minute will be enough) and dissolve the sugar well, stirring with a spoon.
With that syrup we paint our cake.
With a mold, a glass or with the beaker of the Thermomix we form small discs.
We dothe lemon cream following the recipe. If after making the cakes we have leftover cream, we can always serve it in small glasses, as dessert.
We put a couple of teaspoons of cream on each cake disc.
Chop the fruit and place a slice of kiwi or a piece of mango in each cake, on top of the cream.
We put the chocolate in a cup and melt it in the microwave. With a spoon we distribute it over the cupcakes, which we will not have removed from the baking paper yet.
We put each cake on a muffin paper and keep in the fridge until serving time.
