These muffins are a nice alternative to prepare a perfect and flavorful breakfast. They are muffins made with love and very soft, with a pleasant lemon flavor. You can prepare them alone or with a perfect glaze so that they have a nice decoration.

Ingredients

  • 350 g of wheat flour
  • 2 teaspoons of baking powder
  • ½ teaspoon salt
  • 165 g of sugar
  • 60 ml of aceite oliva
  • 250 g of natural yogurt
  • 2 large eggs
  • The zest of 2 small lemons
  • 1 tablespoon of lemon juice
  • Glazed
  • 1 cup of powdered sugar
  • 3 tablespoons lemon juice
  • A small splash of milk
  • The zest of a lemon for garnish
Preparation
  1. We heat the oven to 180 °. In a large bowl we pour dry ingredients. We add the 350 g of wheat flour, the two teaspoons of baking powder, the half teaspoon of salt and the 165 g of sugar. We mix it.Glazed lemon muffins
  2. We add the rest of the ingredients: the two eggs, the 250 g of natural yogurt, the lemon zest, the tablespoon of lemon juice and the 60 ml of olive oil. We beat it well with a hand mixer with rods or by hand.Glazed lemon muffins Glazed lemon muffins
  3. We prepare the cupcake pods and we fill it with the mixture, without reaching the edge. You have to calculate that when they are baked they have to grow and do not come out of the capsules. We put it in the oven around 20 to 25 minutes.Glazed lemon muffins
