This is my favorite empanada because it is the one that has always been done at home. The dough, with paprika, is delicious. Also the filling, with boiled egg and some good pieces of mackerel.
It is perfect to take to pool, beach or mountain. And it looks very big since it is as big as the baking tray.
You can decorate the surface with a little dough. With it you can make letters or even small stars or other shapes if you use a small pasta cutter.

Ingredients
For the filling:
- 1 cebolla
- 1 red pepper
- 40 g of extra virgin olive oil
- 600 g tomato pulp
- Sal Island
- Sugar
- 200 g of oil canned mackerel or tuna (weight once drained)
- 3 hard-boiled eggs
- 1 beaten egg to paint the surface of the pie.
For the mass:
- 520 g flour
- 200 g of sunflower oil
- 200g milk
- Sal Island
- Peppers
Preparation
We start the recipe by making the filling.
We put the eggs to cook in a saucepan with water.
We chop both the onion and the red pepper in a mincer, in Thermomix or simply with a board and knife.
We put a drizzle of oil in a frying pan and fry the onion and pepper.
After a few minutes we add the tomato pulp and let it cook for approximately 15 minutes.
We add a little salt and a little sugar to correct the acidity.
To make the dough, put all the ingredients in a bowl: flour, sunflower oil, milk, salt and paprika.
Mix well until our dough is smooth, without lumps.
We divide it into two parts. We stretch one of the parts with a roller, between two sheets of baking paper, and put it on a baking tray, with the base paper.
We put the tomato sauce, pepper and onion on that stretched dough.
On it we distribute the mackerel.
We chop the boiled eggs and put it also as seen in the photo.
We spread the rest of the dough and cover the pie with it.
We seal the dough with our fingers. If we have a little dough left over, we can use it to decorate the surface.
We paint that surface with beaten egg and with a fork or the tip of a knife we make a hole in the dough.
We bake at 190 for 15 minutes.
Then we lower the oven to 170 and continue baking for 25 more minutes.
