Salmorejos you will have tried the classic Red. In another color, green, we once tried a salmorejo based on cucumber, at that time when this vegetable had been punished in our country. Again we will try a greenish salmorejo. This time contains avocado and green tomatoes.

Ingredients

  • 2 ripe avocados
  • 2 green tomatoes
  • 2 handfuls of lamb's lettuce or watercress
  • 50 ml. white wine vinegar
  • 200 gr. Of olive oil
  • 100 gr. stale bread
  • shawl

Preparation

  1. Peel the tomatoes and chop them well. We leave them to soak together with the chopped bread, the vinegar and a drizzle of oil. Let's go out

  2. Let rest for an hour in the fridge.

  3. We beat this preparation together with the avocado and the lamb's lettuce, adding oil little by little. We rectify dressings.

  4. We strain.

  5. We beat again.
