1 egg
5 yolks (reserve the whites)
1 ½ cups of sugar
zest of ½ orange
1 teaspoon of orange essence or orange blossom water
100 ml of cream
100 ml of milk
1 cup of ground almonds
1 teaspoon yeast
green food coloring
whipped cream
green shavings to decorate

Preparation

Preheat the oven to 170 C
Mix the butter with a whisk until soft and creamy; Add the sugar and beat until pale
Add the egg yolks, one by one, beating vigorously.
On the other hand, we mix the cream, the milk, the orange essence, the orange zest and the coloring (depending on the brand, you will need a few drops or whole teaspoons, but we want it very green).
In another bowl we mix the almond with the flour and the yeast.
Add the mixture of net and flour to the eggs in several times
We start by adding 1/3 of the flour and stir; 1/3 of the cream and stir and so on until the flour mixture is finished
Everything must be well incorporated.
Divide the dough between the muffin cases (if they were green, even better…) and bake for 20 minutes.
Let it rest on a rack, and serve with whipped cream on top, which we sprinkle with green shavings.
