Ingredients
Marinated salmon:
- 4 salmon fillets with skin and without bones (about 3-4 fingers thick)
- 4 tablespoons olive oil
- 4 slices of ginger
- The skin of ½ lemon
- The skin of ½ orange
Mashed potatoes:
- 2 medium carrots
- 1 potato
- 25 butter g
- shawl
- pepper
- a splash of oil
Preparation
Marinated salmon:
- We put the oil, ginger and the citrus peel in a mincer. We cut it into large pieces.
- We put the salmon in a wide dish and pour the marinade on top. We cover with plastic wrap (or put it in a tupper) and store it in the fridge for 2-6 hours. You can even leave it overnight.
Mashed potatoes:
- We cook the peeled carrot and potato in large pieces in salted water. About 20 minutes will be enough.
- When they are tender, we drain them and put them in a mincer or a puree raisin. We crush it and add salt and pepper to taste. Add the butter and blend again.
- On a griddle we make the grilled salmon, cooking it with a few drops of oil, first on the skin side (about 4-6 minutes depending on the thickness) over medium heat and about 2-4 minutes on the skinless side.
- Add flake salt on top, dill or pepper to taste.
- Serve accompanied by the puree.
