La graffiti, also known as the guinea fowl, is a bird with elegant plumage. Gastronomically speaking, the flavor of its meat is similar to that of chicken.
It is perhaps a more delicate meat that, depending on how we cook it, can be dry. Therefore, a good option to cook it is to prepare a stew.
I had leftovers the other day green beans and I have used them here by putting them already cooked. If you have them raw, you can cook them previously or add them to the stew before, so that they cook with the meat.
Pharaoh stew with green beans
A traditional stew with delicious meat

Ingredients
- A dash of extra virgin olive oil
- 900 g of pharaoh, in pieces
- 2 small onions or 1 large onion
- 1 ripe vine tomato
- Sal Island
- Pepper
- Aromatic herbs
- 500 g of green beans already cooked
Preparation
We put a drizzle of olive oil in our saucepan or cocotte. We seal the meat on both sides, letting it brown.
Chop the onion and tomato and put on the meat.
We mix and cover our stew with the lid.
Let cook for 50 minutes, medium-low heat. Next we add dried aromatic herbs and the green beans already cooked in my case.
We continue cooking for another 15 minutes.
If our green beans are uncooked, we can add them to the stew at the beginning, when we add the onion and tomato.
We add more salt and pepper if we consider it necessary.
We serve immediately.
