Ingredients

500 gr. chicken livers
200 gr. of butter
50 ml. of oil
1 leek
1 cebolla
2 cloves of garlic
75 ml of brandy
2 Bay leaves
pepper
nutmeg and salt

Preparation

We put the butter and oil in the glass for 2 minutes at 90 degrees and speed 1.
Next we add the leek, the onion and the chopped garlic cloves. Blend 4 seconds at speed 5. Then cook everything for 4 minutes at varoma temperature and speed 1.
Add the livers, bay leaf and nutmeg and set about 5 minutes, also at varoma temperature and at spoon speed.
Then we add the brandy, add salt and pepper, and reprogram another 5 minutes at the same speed and temperature as before.
We remove the laurel and beat at progressive speed up to 10 for 45 seconds.
We transfer the pate to a mold and let it cool before refrigerating.
Cover the surface of the pâté with lard or liquid gelatin, adding a few grains of pepper and bay leaf to avoid blackening the top of the pâté and make it more attractive. We can also add an envelope of neutral gelatin at the moment in which we beat the pate (step 6). This will make it more unctuous.

Notes

You can substitute butter for liquid cream. In that case, it is added just when we are beating.
