Île flottante (Floating island)

The floating island is a very French dessert. It is about white whites mounted to the point of snow that float on a delicious custard. To check that the custard is ready, we can pour a drop on a surface and run our finger through the center; If the drop is not divided in two, the custard is not there yet.
