Mollusks such as Berber are low in fat and rich in minerals and vitamins. Children tend to like them a lot as an aperitif or included in recipes for rice, pasta or fish. In fact, cockles are a mollusk with a finer, more sea-scented flavor than clams.
We are going to teach you how to prepare them stewed in lemon sauce. Needless to say They are also delicious open with steam and lemon juice.
Ingredients: Cockles, oil, salt and lemon
Preparation: We put the cockles in cold water with a little salt in a bowl for a couple of hours to clean them a bit. After that time we rinse them and put them in a pan with a little salt, oil and lemon juice. We put them over medium heat until they open. We water again with a little lemon juice and if we want we add fresh chopped parsley.
