250 gr de harina
a pinch of salt
8 tablespoons of butter
Zest from the peel of 2 lemons
75 g of sugar
20 g of honey
1 teaspoon of baking soda
4 tablespoons lemon juice
75-100 gr of icing sugar

Preparation

Preheat the oven to 180 degrees, while you prepare the cookie dough.
In a bowl, combine the flour with the salt and set aside.
In another bowl, beat the butter, the grated lemon zest, the sugar and the honey with a mixer with rods, for about 3 minutes, until you get a mixture that appears to be quite smooth and creamy.
With the help of normal rods, add the bicarbonate to the mixture and put the lemon juice on it. Turn the mixer back on and beat for about 10 seconds to incorporate it into the mix. Add the flour and salt and beat on low speed, until all the ingredients are well integrated.
Now, you just need to make the shape you want with the dough, place the cookies on a baking tray and bake for about 10 minutes at 180 degrees until they start to turn golden.
Once ready, let it cool for a couple of minutes and put the icing sugar on top.
