If you like lemon desserts, this pudding you must try. It is not difficult, not difficult at all, and it has an unbeatable texture. They are cooked in a double boiler in the oven, which should not be scary. Advice: Calculate beforehand the container or tray where we will put the water, and pour the water once you have the molds installed to prevent it from overflowing (due to the vertical thrust that every body experiences when immersed in a fluid ... Archimedes dixit). As a presentation idea, you can sprinkle them (once cooked) with granulated sugar and burn it with a kitchen torch.

Ingredients

  • 6 eggs
  • 500 ml whole milk
  • 1 tablespoon of butter to grease the molds
  • 70 g flour
  • 70 g of sugar
  • A pinch of salt
  • the zest of the skin of a lemon (without any white part).

Preparation

  1. We preheat the oven to 160ºC

  2. We begin by spreading individual molds with butter (type flaneras or "ramekins")

  3. We separate the whites from the yolks; Put the egg whites in a large bowl and beat until stiff

  4. On the other hand we beat the yolks with the milk, the lemon zest and the lemon juice.

  5. In another bowl, mix the flour, sugar and salt.

  6. Add the egg yolk mixture and mix until everything is incorporated

  7. We put the whites mounted and incorporate, little by little, with enveloping movements so that they do not go down.

  8. Fill the molds leaving a couple of centimeters to the edge

  9. We place the filled containers on a baking tray that can hold them all and pour hot water until it reaches half

  10. Bake for 30-35 minutes, or until set

  11. They will be golden on top and still soft on the bottom.

  12. Remove from the oven and let cool on the same tray in which we baked them.

  13. Serve at room temperature.
