At home no one can resist a mess of pottage. We consume them weekly and, almost always in the form of a stew, like the one I show you today. This time we have made them with vegetables, giving prominence to the mushrooms.
They therefore do not have meat or sausage but I assure you that this way, with the ingredients that I indicate below, they are delicious. They are more light and perfect for those who want to follow a Healthy diet.
- 400 g of lentils
- Carrots 3
- 1 potato
- 2 celery sprigs
- ¼ onion
- 10 mushrooms
- 1 hoja de laurel
- Extra virgin olive oil
- 1 piece of onion
- ½ teaspoon (for dessert) of paprika
- ½ teaspoon (for dessert) flour
- Sal Island
- Two hours before starting the recipe, soak the lentils in a bowl and covered with water.
- After that time we drain and wash our legume and put it in a large saucepan. We cover it with water.
- We prepare the vegetables.
- We peel the carrots and chop them. We wash and chop the celery. We clean and chop the mushrooms. Peel and chop the potato -in large pieces-. We chop the onion.
- We put all the vegetables in the saucepan, with the lentils.
- We put the saucepan on the fire.
- We let everything cook over medium heat, and we add water when we consider necessary.
- Once the legume is cooked, we prepare the sauce.
- We put a drizzle of extra virgin olive oil in a saucepan. We put it on fire. When it is hot, add the chopped onion and let it poach. Next we add the paprika and the flour. We leave it on the fire for a maximum of 2 minutes.
- We add the sauce to the large saucepan where we have our lentils. We add the salt and let it cook all together for approximately 20 minutes.
- And we have it, ready to serve.
