Light and delicious ham and cheese crepes

Preparation

1. Prepare the batter for the crepes by mixing the eggs with the flour and adding the milk and melted butter with a pinch of salt. We mix everything with the help of the blender and you will immediately notice that the mixture is homogeneous.

2. Once you have it, let the crepe dough rest in the fridge for about 30 minutes and while the dough rests, we prepare the filling for the savory ham and cheese crepes.

3. To prepare the filling, use two or three slices of cooked ham. Cut it into small cubes and mix it with several tablespoons of cream cheese.

4. Take the dough out of the fridge once it has rested those 30 minutes, and make the crepes in a non-stick pan. It is not necessary that you grease it, since the butter that the dough contains will prevent it from sticking.

5. Add a little of the mixture that falls into the center of the pan and spread it by moving the pan in circular motions until it occupies the entire surface of the pan. Don't take too long because the dough is solid right away. Make sure that they are not too golden to fill them without breaking them.

6. Fill the crepes by covering half the crepe with the ham and cream cheese mixture. Roll them carefully so as not to spill the filling, and pass the crepe rolls through the pan so that they finish browning and the cream cheese melts.
