La cauliflower cream Today is very, very light. We are going to make it without potatoes, only with cooked cauliflower and some anchovies that will add flavor.
El oil We will put it raw, at the end, when our cream is already on the plate. We will also put some pieces of black olives that will add flavor and color.

- 1 cauliflower
- 3 canned anchovy fillets
- Aromatic herbs
- 20g milk
- Pitted black olives
- A dash of extra virgin olive oil
- We put water in a saucepan and, when it starts to boil, we add the cauliflower, clean and in bouquets.
- After approximately 20 minutes we check if it is well cooked. When it is, we take it out of the water and put it in a glass to crush it (it can be in a Thermomix or in the glass of a traditional mixer. Add two canned anchovy fillets and crush well.
- Then add 20 g of milk and dried aromatic herbs. Mix using the blender again.
- We serve on plates. We put in each of them some sliced black olives and a drizzle of extra virgin olive oil.
