Madeira Cake or English lemon sponge cake

A recipe that despite its name is not originally Madeira but from England, and derives from the custom of having a glass of Madeira wine accompanying the cake. We already made an orange one and this is a variant with lemon. An ideal cake for a snack with friends and to be enjoyed accompanied by a cup of tea, coffee or, why not, a glass of sweet wine.

Great sponge cake ... it reminds me of the recipe that was passed to me years ago in Ireland.
