A recipe that despite its name is not originally Madeira but from England, and derives from the custom of having a glass of Madeira wine accompanying the cake. We already made an orange one and this is a variant with lemon. An ideal cake for a snack with friends and to be enjoyed accompanied by a cup of tea, coffee or, why not, a glass of sweet wine.

Ingredients

  • The zest of a grated lemon (only the colored part)
  • 225 g of sugar
  • 225g unsalted butter (at room temperature)
  • 4 eggs
  • 250 g of flour with incorporated yeast
  • 2-3 tablespoons of milk
  • Caramelized lemon for garnish (optional)
  • Icing sugar for dusting

Preparation

  1. Preheat the oven to 180º C

  2. Grease a rectangular mold with butter and sprinkle with flour

  3. In a large bowl, mix the butter (soft), sugar and lemon peel, add the eggs one by one without stopping mixing

  4. Sift the flour over the previous mixture with a sieve or strainer until it is incorporated; Add the tablespoons of milk and stir again until a homogeneous mass is obtained.

  5. Pour the dough into the container and smooth the surface with the help of a spatula or the back of a spoon; Bake for 30-40 min or until a toothpick inserted in the center comes out clean

  6. Let the cake cool on a rack

  7. Dust with icing sugar and garnish with caramelized lemon if desired.
