Orange and velvety, as we see in the image, this is the mango sauce. This exotic sauce, with a fruity aroma and sweet and sour taste, is very used in fish dishes and grilled white meats. It also combines very well with pasta and rice garnishes or with spicy dishes curry.

Ingredients

  • 400 gr. ripe mango pulp
  • 1 small spring onion
  • A little butter or oil
  • 1 tablespoon vinegar
  • 1 spoon of sugar
  • Sal Island
  • Pepper
  • A pinch of one of these spices (cumin, turmeric, paprika or mustard)

Preparation

  1. We begin by sautéing the finely chopped chives well in a saucepan with oil or butter.

  2. Next, add the finely chopped mango pulp and add salt, pepper, sugar, vinegar and the rest of the chosen spices. Sauté over low heat until the vinegar and sugar are syrupy.

  3. Then we gradually add a little bit of water until the mango is soft.

  4. We pass the ingredients through the blender and the potato mill and we will obtain a velvety sauce. We rectify spices to give the point to the flavor that we like the most.
