When I see this improvised dessert, I remember my grandmother. It was one of the most typical desserts and snacks that she made me when I went to see her in town, and in addition to being helpful and easy, these Maria cookie cakes are delicious. Ingredients

  • 40 golden Maria cookies
  • 100g butter or margarine
  • 75g sugar
  • 1 egg white
  • 1 glass of cognac
  • Zest of 1 lemon
  • 250g of grated coconut
  • Milk

Preparation

  1. Mix the butter or margarine with the sugar in a bowl, and gradually add the beaten egg white until stiff and the glass of liquor (which is totally optional if we are going to prepare the cookies for the little ones in the house) .

  2. Add the lemon zest and a few tablespoons of grated coconut to the mixture, reserving the rest of the coconut to coat the cupcakes later.

  3. Beat all the ingredients well and fill the biscuits with this mixture, base one biscuit, then the filling and then cover as a sandwich with the other biscuit.

  4. Finally, prepare two dishes. In one of them, she pours a little milk, and in the other, the grated coconut that we had reserved. He sees dipping each of the cookies first in the milk and then coat them with the grated coconut.

  5. Place them on a tray and they are ready to eat. Flavors of a lifetime!
