From New Mexico (United States) comes this pork, very tender to eat and covered with an abundantly spicy hot sauce. If you don't buy the correct chili (the red ones from New Mexico) better to considerably reduce the amount of spiciness and replace it with our sweet paprika. We can eat this pork stew with some Mexican tortillas.

Ingredients

  • 1 kilo of lean pork meat cut into cubes
  • 2 onions
  • 6 cloves of garlic
  • 1 tablespoon flour
  • freshly ground black pepper
  • 200 gr. chili powder or plenty of sweet paprika mixed with spicy
  • 1.5 l. chicken broth or water
  • oil
  • shawl

Preparation

  1. Place a large pot over medium heat and cover the bottom with oil. When the oil is hot, add the pieces of peppered pork (we can do it in several batches) and let it brown evenly for a few minutes. Transfer the meat to a separate plate while we continue with the recipe.

  2. Chop the onion and garlic and fry them very well in the olive oil to brown the pork. When they are well poached, sprinkle with flour and let it take on color, stirring continuously.

  3. Remove the pot from the heat and add the chili or paprika, mix well and add a liter of broth. We let it boil a little and we beat the whole pot so that we have a homogeneous puree.

  4. We put the meat in the spicy sauce and let it simmer together with another 250 ml. more broth for 1 hour.

  5. After the time, we add the rest of the broth if the sauce is too concentrated.

  6. Transfer the stew to a baking dish and cook it at 175 degrees for about 30-60 minutes or until the meat is very very tender and the sauce is thick.
