Monkfish meatballs in white wine sauce

Although we are used to having meat dumplings, today we have a very special recipe for a delicious fish. The monkfish, so we put on our apron to make some delicious monkfish meatballs with white wine sauce that are to die for.

Preparation

The first thing we will do is prepare the meatballs. To do this, we boil the monkfish and let it cool. We split the onion very small and fry it in a frying pan with a little olive oil. Add the minced garlic and let it cook together with the onion.

Add the crumbled monkfish and parsley. We remove everything so that it joins. We drain the bread from the milk and add it. We add the egg, the white wine, the salt, the pepper and we stir everything in the fire until we see that the ingredients have been completely mixed.

When we see that the dough is cold, we make the meatballs, put them in flour, and fry them. As they are done, we leave them on a kitchen paper to drain the excess oil.

Now, we'll get to the sauce. In a frying pan we put the chopped potato and the carrot and fry together with the garlic, parsley and onion.
We add the flour and let it cook a little. Then add the white wine, the salt, the broth and let everything reduce for another 20 minutes until the sauce thickens, taking care that the meatballs do not stick.
