Melba peaches, a dessert with history

Melba peaches are an easy dessert but with a history that goes back more than a century. Chef Escoffier dedicated this delicious ice cream to the soprano Madame Melba when she was staying at the London Savoy Hotel, where Escoffier ran the kitchen. One night, attending a performance of the soprano, Escoffier happened to surprise Madamme Melba to show his admiration.

The next day, Madame Melba attended Escoffier's restaurant with some friends and served them on a large silver platter a swan carved from a large block of ice between whose wings she placed some peaches with vanilla ice cream. Some time later, the two of them met again at the Ritz Hotel in Paris and, while talking, she told him that she still remembered the famous dessert. But Escoffier knew something was missing. At the opening of the Carlton Hotel in London, the chef renewed the dessert and he dedicated it to the famous singer naming it Peach Melba, after adding an aromatic and fragrant sauce of fresh raspberries.

This dessert is very quick to make, we can even make it with ready-made ingredients such as raspberry jam, super ice cream and canned peaches.
