100 ml of olive oil
two cloves of garlic

Preparation

Coat the monkfish in the flour and fry it for a minute and a half on each side.
Drain it on kitchen paper and reserve it wrapped in aluminum foil.
In a clay pot, fry the peeled and chopped tomato, the chopped onion, the tablespoon of sugar, salt and the stock cube in two tablespoons of oil.
