This mussels recipe is a different dish to serve at your table. It is about giving a different touch to some delicious mussels where will we accompany them for a soft coconut milk cream, with curry. Mussels with coconut milk curry

Ingredients
- 500 g of fresh mussels
- 2 bay leaves
- Water glass 1
- 1 / 2 cebolla
- 1 level teaspoon of curry powder
- 400 ml coconut milk
- 5 tablespoons olive oil
- Chopped fresh parsley
Preparation
We clean the mussels. Prepare a saucepan with a glass of water and add the mussels together with the two bay leaves.
We cover and let bring to a boil, it is no more than letting it cook for a few minutes until you see that they have opened. Then set aside and let them cool down. We do not throw the water.
We clean the onion and cut it into julienne strips and very small pieces. Prepare a frying pan with the oil and heat it.
Add the onion and wait for it to cool gently until you see that it softens.
We add the half a teaspoon of curry powder and remove. Let fry for a minute.
We add the coconut milk, andl mussel water and remove. Add salt and cook for 5 minutes over low heat.
Prepare the open mussels on a platter and add the coconut sauce with curry. Garnish with fresh chopped parsley.
