From the pig, and more if it is Iberian, to the gait, the saying went. With Iberian pork rib innumerable elaborations can be made, all of them delicious: stewed with potatoes, in marinade, baked...

This recipe is made with pasta, specifically with thick noodles y it is incredibly tasty. A weekend meal, to be able to enjoy after a good autumn walk.

    Ingredients

    • 300 gr. of nº 4 noodles (thick)
    • 250 g. chopped Iberian pork ribs
    • 2 cloves of garlic
    • 1 cebolla
    • 1 grated tomato
    • fresh or dried oregano
    • ground black pepper
    • shawl
    • extra virgin oil
    • 1 hoja de laurel

    Preparation

    1. We begin by seasoning the ribs that we will brown in a wide casserole (better clay) with a teaspoon of oil. We reserve them on a plate.

    2. If they have released a lot of fat, we remove an amount until only leaving the equivalent of a tablespoon.

    3. Next, we chop the onion and garlic and fry them in this pan. When the onion becomes transparent, add the grated tomato, the oregano and let it cool (5-7 minutes).

    4. Pour 1 liter of water with a pinch of salt and a bay leaf, put the ribs back in the casserole. Cook over medium heat for 15-20 minutes.

    5. Then, we add the noodles and cook them for the time indicated by the manufacturer. Correcting salt and serve us.

      I'm going to test it. In my land, noodles in this way are made for example with clams, prawns, can of tuna (very helpful) or using fried fish the day before (such as horse mackerel or anchovies). Thanks. Let's see how it comes out.
