500 ml. fresh or whole milk
200 gr. pastry flour
4 eggs
1 teaspoon yeast
40 gr. of butter
A pinch of fine salt
Fresh whipped cream
Caramel syrup

Preparation

To start preparing the pancake batter, melt the butter and mix it with the milk.
Little by little we add the sifted flour together with the yeast. For this we can use a strainer and we are hitting it with our hand so that the flour falls into the bowl of the dough in the form of rain.
Once we have this homogeneous cream, add the eggs one by one and a little salt and beat with the whisk. Let the dough rest for about 15 minutes.
Place a nonstick skillet over medium-low heat and brush it with a little butter. The size of the pan will depend on the diameter we want for the pancakes.
Pour enough dough to form a thin layer that spreads over the base of the pan.
When the dough has set, it will be making bubbles and it will come off the bottom, we turn the pancake over and let it brown on the other side.
We serve the pancakes still warm with the whipped cream and caramel.
