Humus is a very typical recipe of arabic cuisine, basically it is a chickpea puree that little by little has been gaining much prominence as recipe to accompany or as a starter thanks to the fact that it is the easiest to prepare.
Preparation
Wash the chickpeas with cold water to remove the liquid from the packaging. Drain them and put them in the glass of a blender. Start shredding them and add the peeled garlic clove, salt, cumin, lemon juice and tahini sauce. If you don't have this sauce, you can prepare it separately in a blender glass with two tablespoons of cumin and four tablespoons of olive oil.
Beat the chickpea mixture well, and Add the water little by little until the dough is creamy.
Once ready, put the dough in a bowl and with a spoon press the center, while you are making small grooves in the shape of circles, so that it is much more beautiful.
Garnish with olive oil and sweet paprika. To accompany it, don't forget the pita bread or, failing that, small bread sticks.
