Ingredients
- 16 flour pancakes
- 4 tablespoons basil pesto
- 1 cup of cooked chicken shredded
- 1 cup fresh spinach leaves
- Half a cup of grated cheddar cheese
Preparation
We will start by heating a pan on the fire, and while we assemble the quesadillas.
On each of them we spread a tablespoon of homemade basil pesto on each of the pancakes.
We top them with chicken, fresh spinach and cheese. We cover with another pancake to close the quesadilla, and we repeat like this with all of them.
Place the quesadilla in the pan and cook it for one minute on each side, until the cheese has melted.
