There are several kinds of pisto, we have the Manchego pisto which is the best known, or the Murcian pisto. This time we are going to do an Extremaduran style ratatouille. Leaving a bit of what has been usual in the slopes, since it carries eggs.

Ingredients

  • four eggs
  • a can of natural tomato
  • a green pepper
  • half a red pepper
  • olive oil
  • an onion
  • one garlic clove
  • a vegetable stock cube.

Preparation

  1. Cut the vegetables into very small pieces and sauté them in a little oil, add the natural tomato also cut into small pieces, season with the vegetable stock cube and cook for about 20 minutes.

  2. Divide the mixture into four clay casseroles, and place an egg in the center

  3. We take to the medium oven, for about twelve or fifteen minutes, the white should be made, but not the yolk
