500g of minced pork
50g of bacon to mix with the meat (optional)
the skin of 2 lemons (only the yellow part)
2 eggs
3 slices of sliced bread
1 small onion
2 cloves of garlic
1 bunch of parsley or marjoram
3/4 glass of white wine or brandy from Jerez
1/4 liter of milk
30g butter or margarine
100g olive oil 0.4º

Preparation

In a large bowl we put the chopped onion and the pieces of bread soaked in a little warm milk, the grated lemon peel, and the chopped parsley (or marjoram). Season, crack the eggs and mix with clean hands or with a few wooden spoons. We must form a compact mass.
We form a roll with the meat (or several little ones); we flour it and brown it in a casserole with the oil and butter; add some bay leaves. Transfer to a refractory container and finish cooking in the oven at 200º for 45 minutes. We are watering the meat roll with the oil and with the glass of wine or brandy.
Halfway through cooking, place a few lemon wedges and the minced garlic on top. The meat must be well done; to be sure we can insert a needle into the meat: the juice that comes out should be white. Let cool to be able to cut better into slices if we are going to use it as cold cuts.
Accompany with a mango chutney.
