Butter, flour and milk ratio for my best croquettes

I have some easy to remember proportions that will be very useful to obtain exceptional croquettes. One hundred grams of butter, one hundred of flour and one liter of milk. With these three ingredients and in those quantities we will make a delicious béchamel with which to prepare some great croquettes, in this case, of cooked meat.

About quantity of meat (or fish) that we will put ... everything will depend on our tastes, if we like croquettes with more or less "bumps". And, since croquettes are usually a harvest recipeIt will also depend on the amount of meat that, in this case, we have left over.

Do not stop trying them but have patience Because, for the milk to be well absorbed, it will take us a long time, and we will have to stir constantly.

    You can add wholemeal flour to the croquette dough as a substitute for the egg, since my daughter is allergic, thanks

      Hello Sandra. Actually, I use the egg only for the batter. Substitute it for milk (you coat the croquettes in milk and breadcrumbs) and they will be just as delicious.
